it is gaining popularity in urban India as it has immense health benefits.

It can be prepared in many forms for each and every meal. Here I have made fruit filled ragi cupcakes. Enjoy.

Ingredients and spices that need to be Prepare to make Raagi and Fruits Cupcakes:

  1. 1/2 cup Ragi flour
  2. 1/2 cup Whole wheat flour
  3. 1/4 cup cocoa powder
  4. 1/2 cup Curd
  5. 1/3 cup Cooking oil (cold pressed)
  6. 1/2 cup + 1: tablespoon Sugar or jaggery
  7. 1/4 tsp Salt
  8. 1 tsp Baking powder
  9. 1/2 tsp Baking soda
  10. 1/2 cup Milk
  11. 1 tsp Lemon juice
  12. 1/2 cup Chopped strawberries and bananas
  13. 1/8 tsp Strawberry essence
  14. as needed Warm water if needed
  15. 8-10 Strawberry slices dusted with flour for garnish

Instructions to make to make Raagi and Fruits Cupcakes

  1. First, preheat the oven at
    180 °c for 10 minutes.
    Grease and line cupcake tin with paper liners.
  2. Then sieve the dry ingredients twice. Keep ready.
  3. In a small bowl, mix lemon juice and milk. Keep covered. Take a larger bowl and beat together curd, oil, jaggery powder, vanilla for 5 minutes.
  4. Add chopped fruits and mash well with a fork. Then slowly fold in the dry ingredients in the wet mixture. Alternate between adding milk and dry ingredients with spoon.
  5. Add hot water to make it into dropping consistency. Do not overmix.
  6. Drop scoop fulls of mixture into each of the cupcake liners. Leave some space at top for rising. Press a small strawberry piece on the top for garnish.
  7. Bake at 180°c for 20 to 25 minutes or until a toothpick inserted comes out clean.
  8. Remove and cover with a cloth for 10 to 15 minutes. Then enjoy yummy Ragi Choco Cupcakes with tea or coffe
